Overview

Chemistry and discovery are two of my passions. I am particularly interested in using chemical techniques to discover new advances for foods. With new resources and instrumentation now available, the field of taste and aroma isolation is growing rapidly. I hope to develop my skills to participate in this trend as it utilizes my skills and passions.

My research is focused on the identification of aroma composition of plants and mushrooms

  • The comparison of aroma active compounds between fresh and dried habanero peppers
  • Identification of taste modulating peptides from hydrolyzed button mushroom
